A soft round pav, cut through the middle, filled and then griddled until the outside takes colour and the butter has gone everywhere it needs to go. It comes out under a heap of grated cheese and fresh coriander.
It arrives whole, and it is meant to. You pull it apart at the table — it is a bun built for more than one pair of hands, and it does not survive the trip home in the same condition.
