Chai boiled properly — leaves, milk, ginger and cardamom brought up together rather than steeped — then poured into an unglazed clay matka.
The clay is the whole point. It takes the edge off the heat, it smells of wet earth as you drink, and it makes a cup of tea into a reason to stand around for twenty minutes.
Order it late. It is what half the room is holding at eleven at night.
