The betel leaf is trimmed and packed with gulkand, coconut, cherry and a scatter of cooling spices, then lit in front of you and handed over while the flame is still on it. It goes in whole, in one go, and it puts itself out.
It is theatre, and it is also very good paan. The heat lasts a second; the cooling sweetness lasts the rest of the evening. Everybody films it. Nobody regrets it.
If it is your first fire paan, we will talk you through it. Nobody has ever been burned, and nobody has ever had just one.
